After a Virginia winter with brown everything, plus being stuck at home for the past month (thanks Covid-19), I feel like something bright and colorful is desperately needed! Springtime confetti fudge cups have fun fruity flavors speckled with pastel sprinkles all in a mini disposable cup! These are a welcome break from the heavy fall and winter desserts!

Flavoring Options…

Fudge is traditionally dark or milk chocolate, but white chocolate is the perfect blank canvas for other flavors! One way to flavor fudge is by using your favorite (pure) extract from the grocery store baking aisle. I especially love McCormick’s orange extract!

Another option are flavoring oils. They are suuuuuper concentrated so you don’t need much so start with a tiny amount and taste as you go to get the flavor you want! These are also great for making ice cream – stay tuned for some summer ice creams using these!

For my springtime confetti fudge cups, my family voted for tutti-frutti! Just saying that name makes you smile, right?! Amazon sells these in just about any flavor you can imagine, and they can also be found in the Walmart crafting aisle as well as in craft store baking sections!

Sprinkles & Colors…

Though optional, the sprinkle selection is my favorite part of springtime confetti fudge cups! I combined a few different types from a Wilton Easter variety pack. If you can’t find exactly what you want, it’s easy to make a sprinkle mix yourself! Select a few different colors and shapes for contrast, then mix them together! (If you’re a little “extra” you can even make custom colored sprinkles with royal icing, but that’s a topic for another time.)

I recently discovered that you can purchase specialty sprinkles through some grocery store bakeries! My local Giant sold me the green shamrock sprinkles I had been searching everywhere for. I mixed them with gold sprinkles I had on hand to make the perfect blend for my Irish Cupcakes and St Paddy’s Day Pancake Board!

Gifting option: You can stack these in a mug, wrap up with cellophane for a colorful and edible gift!

Next, decide if you want to sprinkle them on top of the fudge, or mix them within! Or, maybe a combo of both! If you mix them in while the fudge base is still warm, the sprinkles will melt and bleed, leaving a pretty marbled effect. If you want the sprinkles to hold their shape and add a crunchy texture, cool the base down before adding!

Make ’em Mini…

If you’re new here, one thing I like as much as a good theme is making a dessert mini. Sure we can make fudge, pour it in a pan, and cut it up into (boring, uneven) squares, but what fun is that? Using a mini muffin pan and foil liners, you can make individual fudge bites that are portable! I portion them with a small scoop, then I press them into the liners with a tart shaper. This gives them a smooth, flat top.

Making them separately also gives you more control over customization! You can personalize one batch for multiple family members or giftees, just by changing the sprinkles! Mini cups also make the perfect personal-sized bite of fudge, which is great for portion control!

Springtime Confetti Fudge Cups

Ingredients

  • 160 g sugar
  • 44 g heavy cream
  • 43 g butter unsalted
  • 64 g white chocolate chips
  • 54 g marshmallow cream
  • as needed flavoring extract or oil
  • as needed sprinkle mix

Instructions

  • Add sugar, cream and butter to a small saucepan. Set aside.
  • Measure out chocolate chips and marshmallow cream, you will need to mix that in quickly!
  • Heat sugar mixture over medium low heat to melt sugar.
  • Bring to a rolling boil, stirring continuously, for 1:30 minutes.
  • Remove from heat and immediately stir in chocolate chips and marshmallow cream. Stir until smooth.
  • Stir in choice of flavoring extract or oil. Taste as you add to get your desired flavor.
  • OPTION 1) FOR MARBLED EFFECT: Stir sprinkle mix in while still warm. Sprinkles will melt leaving smears of color throughout the white fudge.
  • OPTION 2) FOR WHOLE SPRINKLES: Cool mixture by stirring, about 15 minutes. Add sprinkles and fold in quickly.
  • Scoop into mini cupcake liners (no need to spray).
  • Press top flat with Mini Tart Shaper.
  • Place or sprinkle additional sprinkles as desired
